Some landscape projects require exterior buildings, rooms, etc. Therefore the program includes the quick start mode that you can use or by-pass, according with your necessities.
Punch, as any program, has a learning curve. The best way to learn the program, IMO, is practice + practice + practice => The landscape tab includes several tools => try to create elements not related with your project, so you will become familiar with the commands and how to develop the different components.
Now, regarding your question about good learning materials => I wrote eBooks for all the Punch programs, that cover all the features (including Landscape). Also, you will find a step by step tutorial "How to add landscape to a picture"
