Suppose I create a rectangular floor or patio, with four corner points. Now I want to extend that object into a space that requires six edges/corner points. Is there a way to "break" the edges of a floor or patio, or create more points in an edge – similar to the way we can break a wall segment – so that I can extend it into a more complex shape?

Yes, indeed. You can use the "Insert Point" tool (4th icon of the Edit Toolbar) to add points in the perimeter of the floor or patio.

I don't have an "Edit" toolbar. I have an Edit menu, which has no such option; and I have a Floor toolbar, the fourth icon of which is "Wall Break" and which when selected does not want to break a floor (pops up and says "Wall segment not found").

The Edit Toolbar is on the left of the screen, as you can see in the image below (I selected the Insert Point tool)



You can learn more about this tool => User Guide - Page 441
You can learn about the layout of the program in the "A Quick Tour" section => User Guide - Page 20

Punch, as any program, has a learning curve. The best way to learn the program, IMO, is practice + practice + practice => Read and follow the User Guide (this is important), see the videos => In order to get started, try to create elements or a simple plan not related with your project, so you will become familiar with the commands and how to manage the different components and solutions.
