Unfortunately, Punch 2006 (old program) has not vaulted ceilings. However you can create your own with the help of the 3D workshop. If they are vaulted but horizontal, you can use several floor layers and floor cutouts to create the effect (notice that each set of floor + cutout must have the same thickness and elevation)

can anyone tell me if there is a way to make a tudor style gable roof with as 3000?

Hi jeffanteau,
The Tudor Style roof is characterized by prominent pitched roofs, with side gable facades dominated by one or more cross gables
Is this is what you mean, of course you can achieve this goal with any version from 4.5.1. and up
Just use the free hand roof for the main roofs and then a gable connector for the cross gable
If you have a V10 version, you can use a gable roof for the main roof and "cut" it with the Dormer Cutout tool in order to set the connection
Don't forget to set the wall with a pitch according with the roof pitch
