Unfortunately, Punch V6 has not vaulted ceilings. However you can create your own with the help of the 3D workshop. If they are vaulted but horizontal, you can use several floor layers and floor cutouts to create the effect (notice that each set of floor + cutout must have the same thickness and elevation

Regarding the ceiling selection, the best trick is, after you create the ceiling (or floor) don't unselect--> Edit--> move to plan--> (HVAC, landscape, etc). Then Options--> Screen colors
In this way, the ceiling will appear in a different color and will be easy to select

With the ceiling selected, you can change the elevation using the elevation slider (right click--> set the elevation--> write the elevation), or right clicking in the piece --> set the elevation--> write the elevation or Edit--> set the object elevation--> write the elevation

You can make the ceiling / floor button appear selecting the walls around the ceiling or floor
